John DePierro is the Visionary and Co-Owner of MiJo, at the much lauded culinary development, Avanti, in Denver. DePierro received his formal cooking education from the Art Institute of Denver, and refined his skills at beloved Denver restaurants like Row 14, TAG and Aix. He spent three years as the Executive Chef at Bones, where he developed dishes and deepened flavors, securing his place as one of the culinary leaders in the city. “Classic techniques without boundaries” is how he describes his cooking style, informed from a childhood filled with strong food and cultural influences from family roots in New York City, Italy and Puerto Rico and spending his formative years among the food traditions of Texas. When he’s not cooking, DePierro collects cookbooks, attends concerts and travels extensively.
